Amber Roth

​

Amber Roth has been a practicing massage therapist and energy balance practitioner for over 14 years, based in Longmont, Colorado. Her work weaves together diverse energy modalities and hands-on bodywork to create physical, emotional, mental, and spiritual relief for her clients.

She currently co-leads women’s retreats in the mountains of Lyons, Colorado, where participants connect with nature, horses, God, and one another to release the burdens of daily life and embrace wholeness and freedom.

Amber is delighted to join the team for this retreat in the Dominican Republic. Alongside holding space for connectedness, groundedness, centering, and transformation, she will offer massage and energy balancing sessions to attendees.

Jacob Thompson

Jacob Thompson is a Certified Therapeutic Chef with over a decade of experience designing nourishing meals that support healing, vitality, and deep well-being. Trained at Bauman College of Holistic Nutrition and Culinary Arts, Jacob combines culinary skill, nutritional insight, and heart-centered intention in every dish he creates.

As co-creator of this retreat, Jacob is deeply committed to crafting vibrant, anti-inflammatory menus using organic, local ingredients. He will also offer accessible cooking instruction, empowering guests to reconnect with the joy and confidence of preparing meals that nurture a healthy, abundant life.

Chad Close

​

Chad Close has been a devoted student of energy, healing, and spirit for over 25 years. For more than a decade, he has worked in healing groups, guided nature-based healing journeys, and supported individuals through one-on-one sessions. His diverse experience deepens his ability to meet people where they are and guide them toward greater balance and clarity.

Known for his intuitive presence and grounded wisdom, Chad brings a calm, healing energy to every space he enters. Guided by a simple yet profound compass—“How can I be of service?”—he offers a steady and supportive presence to help participants reconnect with their own inner strength and truth.

Nicole Paola Thompson

Nicole Paola Thompson is a spiritual coach who grew up in the Dominican Republic, where her father’s family is rooted. Deeply influenced by the island’s rhythms and ancestral traditions, she started her path of self-healing 15 years ago.

 

She holds certifications in Spiritual Efficient Therapy, is a Master Life Coach, and a Certified Self-Care Coach. A lifelong student of the many modalities that help us become a better version of ourselves—and the version we envision—Nicole blends her knowledge with spiritual practices, somatic awareness, and heart-led guidance to help people return to themselves—whole, sacred, and powerful.

 

As a mother of three, she brings a grounded, nurturing presence to everything she does. She honors the beauty and complexity of balancing personal healing with family life, and this balance is reflected in her work.

 

Nicole is also the co-founder of this retreat—a passion project over six years in the making—created to offer a space where the body, heart, and spirit feel safe, seen, and celebrated.

Chef Francis Peña

Francis Peña is a self-taught chef of Dominican-Spanish heritage, raised in the Dominican Republic. He holds a degree in Tourism and Hospitality Management from UNIBE. Deeply influenced by the Spanish gastronomic revolution, Francis is a curious culinary scientist and lifelong student of the kitchen.

His culinary style blends classic, product-driven cuisine with traditional techniques and modern innovation. Francis is the chef, founder, and co-owner of El Gallego, established in Santo Domingo in 2011, and Casa Gazcue, opened in 2025.

Beyond the kitchen, Francis is a creator on Gronda, a culinary advisor, and has shared his expertise through teaching, on-air appearances with Umami Colectivo, and as a judge on MasterChef Dominicana.

Francis will be joining our team to prepare a delicious dinner for participants and share insights on the joy and cultural significance of a well-crafted meal.
